🍄 Italian Turkey with Porcini Risotto Stuffing
This version is a showstopper, featuring a rich, earthy stuffing made with porcini mushrooms and arborio rice.
🛒 Ingredients
- 1 whole turkey (about 15 lbs)
- 2 cups fresh porcini mushrooms (or rehydrated dried porcini), diced
- 1 cup arborio rice
- 2 links hot Italian sausage, crumbled
- 2 links mild Italian sausage, crumbled
- 1 cup grated Parmigiano-Reggiano
- 1 cup grated Pecorino Romano
- 10 chestnuts, boiled and chopped
- ½ cup breadcrumbs
- 2 large onions, diced
- 10 garlic cloves, minced
- 1 tbsp each: fresh parsley, rosemary, sage, oregano, thyme
- Olive oil, salt, pepper
- 1 cup dry white wine
👨🍳 Instructions
1. **Make the risotto stuffing**: Sauté onions and garlic in olive oil. Add sausages and cook through. Stir in mushrooms and herbs. Add arborio rice and toast for 2 minutes. Gradually add hot broth, stirring until rice is al dente. Fold in cheeses, chestnuts, and breadcrumbs. Let cool.
2. **Prepare the turkey**: Pat dry, season inside and out with salt and pepper. Stuff with the cooled risotto.
3. **Roast**: Place turkey on a rack in a roasting pan. Add wine and some broth to the pan. Cover loosely with foil and roast at 350°F (175°C) for about 15 minutes per pound. Uncover for the last 30–45 minutes to brown.
4. **Rest and serve**: Let rest 30 minutes before carving.

🥓 Prosciutto-Wrapped or Stuffed Turkey
For a saltier, umami-packed twist, try layering thin slices of prosciutto under the turkey skin or wrapping the whole bird.
🛒 Ingredients
- 1 whole turkey (14–18 lbs)
- 12 slices thin prosciutto
- 3½ tbsp kosher salt
- 2 tsp lemon zest
- 1 tsp red pepper flakes
- 2 tsp fresh thyme, chopped
- 2 shallots, halved
- 10 sprigs thyme, 5 sprigs rosemary
- 6 celery stalks
- 1 cup chicken broth
- ¼ cup maple syrup
- 2 tbsp balsamic vinegar
👨🍳 Instructions
1. **Season the turkey**: Mix salt, lemon zest, red pepper flakes, and thyme. Rub all over the turkey and under the skin.
2. **Add prosciutto**: Carefully lift the skin and layer prosciutto slices directly on the breast meat. Smooth the skin back over.
3. **Roast**: Place turkey on a bed of celery, shallots, and herbs in a roasting pan. Add broth. Roast at 325°F (165°C) until internal temp reaches 165°F. Baste with a maple-balsamic glaze during the last 30 minutes for a glossy finish.
4. **Rest and carve**.
